"I buy Eckermann's sausage at HEB in Brenham, sometimes. Another way to get it would be to visit Eckermann's store in Shelby, TX (I think it is still there - call ahead of going). Their beef/pork smoked (not, dry smoked) sausage would be best in cooking. This sausage is like the ones my great uncles & aunts made around Round Top area when I was growing up. Sure wish, now, that I would have had more sense to watch the process! The partial smoke is the key to the flavor. Most sausages you can buy in the grocery stores have a "fakey" smoke flavor & casing. They also have too much fat! I know you need some fat, but, there's such a thing as too much fat - more than the amount of meat! Ok, I know this is a soap-box of mine. Have been planning on trying my hand at making this type of sausage for years! Need to do this!
Hope I've helped. I like to steam sausage in a small amount of water in a skillet with a lid. Serve with a non-sweet cornbread with real butter, pickled beets, fresh coleslaw, home-cooked pinto or fresh purple hull peas, sausage, & sweet ice tea. The best!"
